Whole wheat Atta is made by stone grinding. A process that imparts a characteristic aroma and taste to Rotis. The high bran content of true whole wheat atta makes it a fiber-rich food. This helps to regulate digestion, blood sugar, cholesterol, obesity and Skin quality as well as other health benefits. The temperatures attained in a chakki (stone mill or grinder), produced by friction, are in the order of 110-125 degrees Celsius. At such high temperatures, the carotenes present in the bran tend to exude the characteristic rusty smell and contribute to the golden color of the Atta.
